This weekend, I hosted a fun ‘Ladies Appreciation Brunch’ with 4 of my girlfriends. We were actually supposed to do a Galentine’s Day brunch, but snow happened and we rescheduled. I suppose it was perfect timing to host a brunch since International Women’s Day was also on March 8, and our brunch was just 2 days later. The perfect weekend to celebrate the ladies!
I wanted to keep it simple and sophisticated, so I opted for an Eggs Benedict bar with a selection of various toppings, meats, cheeses, fruit, and scones. It was my first time cooking Eggs Benedict for a crowd, which means it was my first poaching sooo many eggs! I successfully poached 15 the night before and only broke 3 in the process.
I also made my own dairy-free Hollandaise sauce from scratch using this recipe by Tyler Florence. Instead of regular butter, I used Earth Balance Vegan Buttery Sticks and increased the lemon juice and cayenne pepper to mask the more oily taste. Worked like a charm!
As far as the table setting and decor, I made my own canvas table runner and quilting cotton napkins using fabric from Hobby Lobby. They were super easy to make – all I did was hemmed all the way around for the table runner and sewed mitered corners for the napkins.
My mom is a scrapbook and paper crafting extraordinaire and asked her to make paper flowers. I’ve really been loving the paper flower trend and they were a beautiful yet simple addition to the table setting!
Of course, I absolutely could not help but put out a letterboard with a little spin on Ariana Grande’s, “thank u, next”. I have been loving her new albums lately and wanted to add some of her lyrics in a cute and funny way.
By the end of brunch, our bellies were full, champagne was popped and it was great to catch up with my friends! I can’t wait until our next ladies brunch!
